There are quite a few wild beasts in the world, here is some charts showing them and their respective stats.
Most of them are self-explanatory, but track speed may not be, that is the amount of hours in distance that is deducted everytime you successfully track the beast for an hour.
Agressive beasts will attack the player upon contact. Although usually the player finds signs of those beasts before finding them. Dropping 1 lbs of food on the ground will be enough to get their attention long enough for the player to get away

On the following chart, the bonus roll is what the GM has to roll everytime you try to skin an animal. He then adds that value to the base fur/meat and this determines how many you can get out of the beast.

Non agressive animals will only attack if they are cornered and have no way of escaping.
